Ok... I've gone off the deep end I guess. I purchased 10 HUGE packs of chicken gizzards and cooked them all... divided them out into ziplock bags and put them in the freezer to have as snacks for the dogs. I'm told by several sources (vet included) that the gizzards are a great source of Niacin, Vitamin B12, Zinc, protein, riboflavin, Iron, and phosphorus, and they are cheap.
Now I know why they are cheap... they sure stink up the house when ya cook them !!! After these are gone, not sure I'm gonna do it again. (dogs loved them though!) |

Been there, done that, Nora----chicken livers or beef liver isn't an improvement in smell, either! |

I think I'll cook up a big batch to have on hand next year at the meet-up !! Would make a nice side dish to go with the chitlin's and little lizard livers... !! (and fresh boiled corn!) I just dumped them in a big skillet (took three skillets-full) with a TAD bit of olive oil... put a lid on them and cooked them that way. The lid, unfortunately, did not block out the odor! |

Not in the winter when the windows are all shut, but yes, in the summer time, I cook beef liver or chicken liver for treats almost every weekend. Cut them into little pieces, ziplock bag them and refrigerate.

| Oh I LOVE chicken gizzards! Not fried though, in baked chicken - yum. Something about the texture makes them just fun to eat. I've been buying extra when I cook chicken and giving a few to the dogs but I didn't know they were extra good for them. |

If you have an outdoor grill, you can cook on that. My uncle has a gas grill with a side burner for pots. He uses that to cook all the stinky foods, like collards, cabbage and now he could add gizzards to the list (but I don't think he will, as they don't have a dog at the moment!) So folks done here make a fire pit and hang a caste iron stew pot over it to cook chitlins. Again, cooking outside = no smell inside.
I guess the other thought is, if you cook a big enough batch, you don't have to cook them as often!
Nora and Paul, Do you have to do any special dressing out the gizzards? like cleaning?

| I'm pretty sure the processing plant cleans them. You would know if they weren't- I think that's where the grit and gravel that chickens eat ends up. |

(Solomon et. al, 2002). " No worries, the giizzards you buy at the store are cleaned as part of processing. I think Cheryl had the right idea- cook them outside on the grill. |

| They come cleaned in the chicken at the grocery store. I just don't think about what the organ did....the texture is just cool to bite into. But then I love raw oysters, too. Guess I'm just odd! LOL |

Oh Nora, I'm sorry. I didn't mean to upset you. I guess I was thinking about growing up on the farm, where we had to clean and dress out certain meats if we raised and slaughtered on site. I'm glad the plant cleans them! |
