I can still use come recipes for low fat vegan foods. I like about anything in the vegetable way and enjoy beans too. Unfortunately my family can't eat beans, but can eat dryed peas and cowpeas. I like soy too. It is hard to find things that I can make for all of us that all of us can eat and enjoy. Some of the recipes that I found on the internet are OK, a few were good, but none of them was well liked by anybody here but me. And I have been known to eat almost any kind of food which got me into this problem in the first place, cause I do like to eat!:) Any way I need some yummy recipes to tempt my family into eating some new stuff that is better for them.

I never saw the chocolate pie! WOW that is something that I would really really like alot. I am kind of an adict when it comes to chocolate and my husband is even worse! he will eat a half pound bar of chocolate at one sitting. Why don't men gain weight like women do? I sniff a small square off a bar of regular size chocolate and I gain a half pound. That doesn't slow me down much though.

Rosemary, Olive & Walnut Pasta:

1 onion, chopped
1 teaspoon extra-virgin olive oil
2 garlic cloves, minced
2 cups canned chopped tomatoes w/juice
1/4 cup walnuts, chopped
1/4 cup pitted green olives, chopped
1 teaspoon minced fresh rosemary
1/4 teaspoon fresh thyme leaves
3/4 pound angel hair pasta


Bring a large pot of water to a boil. Meanwhile, place the onion in a large microwave safe serving dish. Add oil and toss to combine. Microwave, uncovered, on HIGH 1 minute. Stir in garlic and microwave, uncovered, on HIGH 1 minute.

Add tomatoes, walnuts, olives, rosemary and thyme to onion. Toss to combine. Set aside.
When water is boiling, cook pasta just until firm-tender, about 2 to 3 minutes.
Drain and toss with the sauce. Enjoy!

Here it is! I love this pie! It is sooo good, and good for you!!!

INGREDIENTS:

  • 1 container tofu, silken or firm (approx 12 oz)
  • 1/2 cup chocolate chips (check the ingredients if you're vegan) I use a whole bag of dark chocolate chips! Yummy!
  • 1/2 cup peanut butter
  • 2 tbsp soy milk You will find you need much moe soy milk than this, 1/2 cup or so.
  • 1 pre-made pie crust I use Keebler reduced fat grahm cracker.

PREPARATION:

Melt the chocolate chips over low heat, stirring frequently to ensure the chocolate doesn't burn. You can use a double boiler if you have one. I use the microwave on 'thaw' setting

Once the chocolate is melted, blend together the peanut butter, silken tofu, chocolate and soy milk in blender until smooth and creamy, adding a bit more soy milk if necessary. In a food processor, not a blender!!!

Advice; put the peanut butter in last!!!! Don't worry, this recipe is very forgiving!!!


 

Pour into pie crust and refrigerate until firm, at least one hour.

I have used a recipe very similar to this before! It is fabulous!!!

The pie and pasta both sound yummy! Thanks so much, I will try the pie as soon as I can get some silken tofu. I usually get extra firm cause I like to stir fry it in soy sauce, boulion, and seasame oil. Very little seasame oil. Is there something that I could subsitute for the peanut butter? Or is it what holds it all together? It is the fat content that gets to me and they don't make low fat peanut butter. But so far 28 lbs off with the vegan low fat diet and I need to keep going! I am trying to look at losing 10 lbs at a time so I don't get discouraged and quit cause its too hard. I need to keep it off too, I want to see all my grandkids and at least 3/4 of my great-grandkids.

You can probably skip the peanut butter. The chocolate will get firm and hold everything together.  I use natural peanut butter, and tho there is fat in there, it is good fat, and lots of protien.
