I was sitting at my mom's house today trying to figure out what to make for dinner. She suggested this potato and greenbean with pesto thing that she made and loved it. It's very easy, and oh my so good. I served it up with a salad.

All you need is: amount varies to how much you want to make

a little oil,

some potatoes- I used white potatoes

fresh green beans

garlic

pesto sauce

salt

pepper

red pepper flakes- if desired, I use them all the time in italian like foods

What to do:

Slice up cleaned potatoes- the thinner you slice them the quicker they will cook up.  snap off ends of the green beans and soak in ice water to make crispy. Heat fry pan with a little oil in it. Add in garlic, potatoes, green beans, salt, pepper, peper flakes. Well, pretty much everything except pesto sauce. Once they are tender add in pesto sauce. Cook a few more minutes until potatoes are soft, not mushy. I know, I think these might be the really technical directions, but really it is just cooking up the potatoes till they are soft. Very simple, don't think it can be messed up.

She says that it is really good as left overs too. This is coming from someone who never, I mean never, eats left overs. She refuses to, except this.
