Any ideas of what to do with left over roast beef?  Ive shredded it and mixed with fried potatoes with gravy, but what else can I do with it?

Pour some bar-b-q sauce on it and serve it on a bun --

Or mix it with a can of mixed veggies, cream of mushroom soup and put in a pie crust for a pot pie --

Or for breakfast we love to heat up the roast & gravy and serve it up on a big cathead biscuit!! Couldn't get any better!!

Cube it up and add some beef broth and assorted chopped veggies (tomatoes, onion, celery, corn, celery, carrots, frozen peas, frozen green beans) and make vegetable soup. Simmer 30 minutes or so until all veggies are tender.

Beef Enchiladas!

Shred it and warm it up, maybe with a little salsa. Put a little in a corn tortilla, add a little shredded cheese, and roll it up and put it in a pan. Keep doing that until you have a panful. Get a can of enchilada sauce and pour on top, add more shredded cheese on top, cover with foil and bake it at 350 for about 15-20 minutes. Remove the foil and bake it about 5 minutes more, until the cheese is melted.
