This  is a recipe  is from Finland,  and its called Vatkattu Marjapuuro.which means  whipped berry pudding. You make it with cranberry juice &  cream of wheat. Heres how you make it.

First you  will need  3 cups cranberry juice -- bottled or canned. 6 tablespoons sugar and
1/2 cup uncooked cream-of-wheat.

 

 

 

In a 1 1/2 to 2 quart saucepan, bring the cranberry juice to a boil While the juice boils, sprinkle in the sugar, a little at a time  and then slowly add the Cream-of-Wheat, stirring briskly with a wooden spoon.  Reduce the heat and simmer for 6 to 8 minutes, stirring occasionally until the mixture becomes a thick puree. With a rubber spatula, transfer the puree from the saucepan to a large mixing bowl..Use an electric mixer for the next step. (Although it is possible to make vatkattu marjapuuro with a wire wisk, its not really practical;since an hour of vigorous whisking might be required.)Beat with the mixer set a high speed for 10 to 15 minutes, or until the pudding has tripled in volume, is a delicate pink color and is very light and fluffy. Pour into a large bowl, or individual dessert bowls and keep no longer than a few hours before serving at room temprature.

 Note:you can also make this dessert using apple, strawberry or Raspberry juice

It is good. I think I'm going to make some tommorow to take over to my Dad's for sunday dinner.The only thing is if you don't have an electric mixer, it can take forever to make.

Mmmmmm This really sounds good! I love cream of wheat, too. I just love Indian food and they do a lot of interesting side dishes using cream of wheat.

Oh, I understood that.  I was just adding an "aside" that the Indians also do interesting things with Cream of Wheat.

I've actually been thinking about making some of this for our dinner tomorrow at Dad's again . Me and my sis in law usually cook sunday dinner over at my Dad's. So he don't have to do any cooking. His idea of a meal is to fix either some kind of sandwhich or open a can of soup with a biscut. I might see what he thinks about having some german food tomorrow night. I have my grandmother's cookbook that has some good recipes in it. My Dad's side of the family is german and I remember my grandmother cooking a lot of good dishes.
