This is a South Beach Century Club (folks that lost 100 lbs or more) recipe I found on their website last year and I modified it just a bit.  I can't give you nutritional values, but it can't be too bad with as little oil, flour and sugar as these have.  And they have so many HEALTHY ingredients in them, too.  We allow ourselves two of these for an occasional treat on our diet.  Remember, they are not calorieless, so even though they're healthy, too many of them is NOT a good way to stay on your diet.  And these are REALLY good! 

 

PEGGY'S DIET OATMEAL COOKIES

Oven Temp:   350º

Cook Time:    15 minutes

 

Mix well together in medium bowl:

¼ c. Smart Balance softened (or other low-cal margarine)

2 T. flax seed oil (could use Canola oil but not as nutritional)

¼ c. brown sugar

½ c. Splenda (bulk granular)

1 tsp. vanilla

1 egg beaten or Eggbeater equivalent (you can add another egg if the dough just absolutely will not hold together, but wait until the end of mixing, only adding if necessary)

1/8 tsp. salt

Add in:

1 ½ c. rolled oats

½ c. walnuts chopped

½ c. craisins chopped

2 T. milled Flax Seed (in grocery store where the flours are)

2 T. wheat germ (usually with hot cereals at the store)

 

Stir well and chill 10-15 minutes while oven is warming up.  Spray  two 13x15 sheet pans with PAM.  Carefully drop by rounded teaspoons onto sheets about 2" apart.  I can usually get all the batter onto the two pans.  Batter is quite loose but heap together as best you can.  Do not flatten the raw dough.  Let it stay mounded.  Bake 15 minutes and DO NOT OVERCOOK.  Only the edges should brown.  Let them entirely cool on the pans and you should be able to remove them from the pans without tearing them up.

Well I certainly don't need to lose 100lbs. But that recipe does look good. And it uses splenda instead of real sugar. which is good. Because real sugar is not good for you.  I might just try this recipe.

Well, it does have 1/4c. brown sugar, but that's much better for you than white sugar. Don't know how they would come out if you used Splenda brown sugar there. They might not cook right without ANY real sugar in them. Sugar effects how baked goods cook as well as just sweeten the item.
