My boyfriend wants sweet potatos on Christmas, which is more than fine by me, I love them, but Ive only done them like a baked potato because my mom and I were the only ones that liked them. Well the BF wants the ones with the marshmellows on it. Got any recipes? Could so use some! No-De says "pweeeeeeeeeze?!"

Hi! Yep, I have a real good recipe for yams.....here goes.....

Sweet Potato Casserole

Potato Mixture:
3 cups canned yams/sweet potatoes (1 lg can 29 oz.) liquid drained off
1/2 cup milk
2 eggs beaten
1 stick margarine softened
1/2 cup sugar
1 teaspoon vaniilla

Topping:
1 cup brown sugar
1/3 cup flour
1/2 cup margarine softened
1 cup coarsely chopped pecans

Mix Potato Mixture together with a mixer.
Spread into a buttered 13x9 pan
Mix topping ingredients and crumble over potato mixture in pan.
Bake at 350 for 35 minutes.

YUMO!
