I made some lemon cookies from a lemon cake mix last night.  They turned out pretty good!

1 box lemon cake mix

1/4 to 1/3 cup of water

1 egg

lemon juice (optional)

powdered sugar

You mix the cake mix, egg, and water together.  Roll into small balls, roll in powdered sugar, and place on a greased cookie sheet.  Bake at 350 for about 10 minutes or until light brown.  Don't overbake!  The cookies might still look moist in the middle, but they will set up as they cool.  Sprinkle more powdered sugar on top after they are cool.

So, are they soft or crispy? My mom used to get these cookies called 'Lemon Coolers' and my hubby loved them. I haven't been able to find them for a couple of years now, but always keep my eye peeled for them. They were made by Nabisco. They were 'fat' but crispy.

hi guys, you can do this with any cake mix, I make spice cookies, peanut butter, chocolate chip and oatmeal all the time. I don't measure anything... (I'm bad that way but with this many teenagers, hey something's gotta give, right? lol) for all but the spice cookies, I use a yellow or white cake mix, a blob of margarine and one egg. stir til moist and roll into balls. For the peanut butter cookies, omit the blob of margarine and use a blob of peanut butter instead! For spice cookies start with a spice cake mix. This is far too easy to not try... guaranteed they will go fast!

The ones from chocolate cake mix are the best! My mom used to make those when I was a teen. I hadn't thought of those in years!

ANYTHING WORTH DOING IS WORTH OVERDOING Mom of eight. Pack leader to ten ratties: Maggie, Mysty, Berry, Simon, Ceecee and five puppies, Star,Sari, Bluebelle, Double stuf,and Snortie. As well as Ginger the Border Collie and Taffey the mini Aussie and Taffey's half rattie daughter Nedd (nasty evil devil dog and she really is too).

oh! yea!!! i'VE MADE THOSE FOR years! ITS like 1 BOX (cake mix)1 STICK OF BUTTER, 1 EGG!!!350 15-20 MINS DEPENDING ON HOW BIG THE wads  Are>>>don't try to remove from them  for @5 mins or they will fall apart!!! LET THEM COOL ON THE Pan,then the best is can'd frosting as soon as they get out of the cookie sheet, let it melt and cool!!!! the they MUST be put in a closed container to keep them soft!!!soooo goodd!!!

I'd love to taste 'em, but I have some oatmeal cookies I made last night and one of the girls from Ratlover.com is bringing cookies of some type,  and Cat said she wanted to bring pineapple upside down cake.   So not necessary unless you just want to.  Your call.   You KNOW they'll get eaten if guys are there.
