Hi! Here is the Ranch Potato Casserole recipe I like to make at Christmas with ham....but it would work with whatever.....
6-8 fist size red potatoes
1/2 cup sour cream
1.2 cup prepared ranch dressing
1/2 cup bacon bits
2 TBL minced fresh parsley (sometimes I use the dried if I don't have fresh)
1 cup shredded cheddar cheese
Cook potatoes until tender and cut into 1' cubes. Leave the skins on. In a separate bowl, combine sour cream, ranch, bacon, parsley and 1 cup of the cheese. Place potatoes in greased 13x9 pan. Pour sour cream mixture over top of potatoes and toss gently. Then make topping below:
1/2 cup shredded cheddar (sprinkle over entire pan now that potatoes are in there)
2 cups slightly crushed corn flakes
1/4 cup butter, melted.
Mix corn flakes and butter and sprinkle them over top of potatoes. Bake at 350 for 40-45 minutes.
This is something you can make a day ahead. I just don't do the topping and put it on until I am ready to bake it.
