Ok, so thick potato soup is one of my favorite soups, and I found this recipe online and was thinking of trying it.  So I am posting it here to see if all of you cooks think it looks yummy!  The other thing I'm wondering is, what do they mean by scooping out the pulp of the potato??  I never heard of that before!  And does it sound like it would make.... like a bunch?  Because it only needs to feed 2 of us, plus some for leftovers

4 lg. baking potatoes
2/3 cup butter or margarine
2/3 cup flour
6 cups milk
3/4 tsp. salt
1/2 tsp. black pepper
1/2 tsp. white pepper
4 green onions, chopped and divided
12 slices bacon, cooked and crumbled
1-1/4 cups cheddar cheese, shredded and divided
8 oz. sour cream

Wash, dry and prick potatoes with fork. Bake in 400°F oven for 1 hour or until done. Let cool. Cut into half lengthwise and scoop out pulp; set aside. Use skins for something else, such as stuffed potato skins.

Melt butter in heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk, cook over medium heat, stirring constantly until mixture is thickened and bubbly. Add potato pulp, salt, pepper, 2 Tbsp. green onion, half the bacon and 1 cup cheese. Cook until thoroughly heated. Stir in sour cream. Add extra milk if necessary for desired consistency. Serve with remaining green onions, bacon and cheese.

Sounds good, they just mean when the potatoe is done baking, cut it in half and scoop out the potatoe and leave the skin. That sounds really thick, let us know how it goes...

Like you do an avacado... in other words "peel it". Sounds yummy, Ive always wanted to try to make a potato soup and a chicken tortialla soup as well... but Ive never gotten there! Lemme know how it turns out!!!

Too heavy for my taste. All that milk, butter, cheese, sour cream - good for putting weight on a thin person though. LOL!

so the "pulp" would be like mashed potatoes and melt in right? not lumpy? Or would it be a little lumpy?

Can you tell I'm still new to this crazy "cooking" thing

I've made this soup by boiling the potatoes. It was grandma's recipe. The bacon is the great thing in it. It does sound a bit heavy. Her didn't call for cheese or sour cream.

I'd say "soft chunks". If I was making this recipe... I'd peel potatoes, cut into chunks and boil... then follow the recipe through. I take all the shortcuts possible!

No Silly, I have no idea how much you weigh!   It's just one of those foods that my mom would say "this will put some meat on your bones" about.

well, I am trying to loose some weight and eat better... So maybe I'll cut out the sour cream and use fat free milk hehe! Gotta keep the cheese though... I'm addicted to cheese! Maybe I'll try turkey bacon too, that's supposed to be better for you right?

Mmmmmmmmm now this sounds Yummy. Tully's makes a killer potato soup. I like chunks of potato in mine, but this one sounds perfect to me!! Let us know what you think of it Kim, I would love to try it, sounds like an easy one too. Now I am hungry........

MMMM, it is yummy It turned out super thick though! And it needed mroe salt/pepper.... maybe because I left out the sour cream and used fat free milk, and turkey bacon though. Seriously, I couldn't eat 1/2 of what I put in my bowl, it is sooooo filling! And I think I have enough to last about a week!
