For those who love pumpkin flavor, this recipe will go over well!

Heat oven to 350, grease cookie sheet.

2 c. Flour

1 c. Oats                 

1 tsp.baking soda

1 tsp.cinnamon

1/2 tsp. salt

3/4 c. butter or margarine

1 c. packed brown sugar

1/2 c. white sugar

1 egg

1/2 tsp. vanilla

1 can of pumpkin puree

1 c. raisins (optional)

1/2 c. chopped walnuts (optional)

Combine all powders(dry) not sugars, in one bowl. In another bowl cream butter & sugars until smooth. Add egg& vanilla, beat until smooth. Mix all ingredients together in one bowl with pumpkin puree. Drop by tbsp. on cookie sheet(1 inch apart). Bake for 12-15 minutes or until golden brown.

Oh, my mom used to make pumpkin cookies with walnuts. They are great. Hers are kind of bread like and fluffy. So yummy.

I made these yesterday for my kids(they are almost gone!)and they turned out great. They were fluffy and bread like as well. I enjoyed a few as well Of course, Phoenix had to test a small piece!
