Every wonder how people make a pretty brown gravy????

Pour some cooking oil in your pot just enough to lightly cover the bottom. You don't want too much. In the center of your pot take a table spoon and pour two tablespoons of sugar in a pile. Turn the fire on high and do not walk away and do not stir. Watch the sugar burn until it turns a dark caramel color. Once it reaches this color remove from fire.

From this point you add your meat to brown on a medium high fire and then add onions and brown some more. Once your meat is completely browned you can add a little water or chicken broth and cover and continue to cook on a medium/medium low fire untiil done.

You just might want to do that... It does take some practice when you first start. Oh and just a note... it will smoke as the sugar burns so that is "ok" don't panic!!!

Or you can just add a teaspoon of Kitchen Bouquet (usually in the sauce/condiment section of the stores) to "not so brown" sauces. Not much flavor there, either, just color. Will brown it up in an instant. Been using it for years when the pot roast/stew sauce isn't dark enough to be eye-appealing.
