Crawfish or Shrimp Dressing in the Rice Pot

1 pound of crawfish or shrimp peeled

3 cups of rice (raw)

1 stick of butter

1 can of Cream of Mushroom

1 can of Chicken Broth

½ onion

onion tops

½ bell pepper

½ garlic

Season to taste

Combine all ingredients into rice pot and turn on. Stir every so often and when rice is tender it is done and ready to eat.

Mmmmmm! That sounds good, Donna. That sounds like a lot of rice for 1lb. seafood, though. Is that raw rice, or already cooked rice?

This will be raw, and no it is not too much. It will make a dressing in the end. I have also used this as my stuffing for a chicken which was to die for.

Thanks for the clarification, Donna. Then this really makes up a BIG batch for a large family. I've never cooked more than 2c. of raw rice even for company. Two cups makes a LOT of rice.

Well yes if you put it that way, I have a household of 6 and feed 8-9 on a daily basis.

It seems pretty simple to cut in half though.

Should be very easy to cut down if you just take half of everything.

Just wanted to say that I cooked this for my family when I went on vacation a couple weeks ago and they all LOVED it. I used the shrimp. I must say that this is so EASY and tastes like I spent hours in the kitchen. Thanks for the recipe. I'm gonna get more from here and cook now that I have a man in the house. (smile)
