Ok, I know this is probably a really easy recipe... but I want meatloaf tonight! And I don't remember my g-ma's recipe!!!  I tried to call her but she's not home... of course..   And I'm runnign out of time for dinner...  So if anyone has a good recipe or something similar to hers I would really appreciate it!   I'm trying to impress Kevin with my cooking skills, and get him to eat more than just tacos, spaghetti, and pizza!   He's claims he never had meatloaf!!!

Ok, this is what I can remember from hers (don't know ANY amounts):

ground meat
ground pork?  maybe??
chopped onions
garlic
lots of ketchup
roll into a log, put a dip in the middle and fill with ketchup
cook until its done   Don't burn it...

Her recipe was very simple, no fancy stuff.... And she would do crazy things like say "ah, I found a couple packets of taco bell sauce, so I threw that in too"  I swear her meatloaf never tasted the same twice!

Um: My husband would so turn three shades of red at that recipe, LOL  He doesn't do "red" meatloaf - his a more um Slovak version

Here's his version as best I can remember it.

1 part ground beef

1/2 part ground pork

finely chopped onions

parsley flakes

3/4 can cream of mushroom soup (or more depending on how big of a meatloaf you make)

breadcrumbs

eggs

Mush all ingredients together in a large bowl until the consistency is that of a meatloaf that can be formed into the correct shape. Place in roaster pan and with the side of your hand, make and indentation down the center of the meatloaf (longways) and take remaining cream of mushroom soup and coat the outside of the meatloaf, putting a little extra in the indentation.

Trust me when I tell you this is the BEST meatloaf in the whole world

hmmm, mushroom soup huh? I could like that! But no ketchup!! hehe, other than that, the recipe sounds very similar!

Nope...no ketchup, no spaghetti sauce, nothing resembling either (That's the only way I had it growing up until I met my hubby - his 'style' is very, very good) Fabulous with mashed potatoes

Nat: You should be fine using a substitute (as long as it's liquid) but it's only 1-2 eggs depending on the size. You just have to kind of eye-ball it and get a feel for the consistency...you know?

oh, and one last question, I promise What temp. do you cook it at and how long?

I don't put chopped garlic in the meatloaf, though a little won't matter - you don't want to overpower it. I use garlic powder, again by eye-balling it. Temperature? 350 degrees. If the meatloaf is small - say a standard loaf size pan, it should take around an hour to an hour and a half. If you have a meat thermometer, meatloaf that includes pork should show an internal temp of around 185 degrees.

I'm going to be expecting a follow-up post on how your meatloaf has turned out Kim and if Kevin enjoyed it. Our friend recently had Mike's meatloaf and he'd never had it before either (hard to imagine obtaining adulthood and beyond without ever having had meatloaf, isn't it?) He LOVED it

I always put either oatmeal or Italian bread crumbs in my meatloaf.

Yes, my list of ingredients just said breadcrumbs, but I do use the Italian seasoned ones for more flavor. Thanks, Pam

I always use the little flavoring packet you buy, follow the directions and add some oatmeal, pour tomatoe suace over the top half way through, and it's awesome! I want some now too!!!!

We eat A LOT of beef a chicken in our house, becuase I can't stand pork, except for sausage, bacon, and loin. I am always looking for something new to do with hamburger, and that cream of mushroom meat loaf sounds awesome!

Kim -- couldn't help but chuckle at this.  Reminds me of a recipe my grandmother handed down for molasses pie... back before they had electric stoves.  She said "you put it in the oven and bake it until it's done".  haha

I've been making meatloaf since I was 12 (a LONGGGGG time! lol).  But I don't have a recipe...  when I cook it, I cook it with potatoes and carrots and onions so it makes a meal.  Nothing like enjoying the aroma throughout the house as it's cooking.

Awwww---thank you so much!  I will definitely TRY this, probably this weekend.  I DO cook once in a great while, and I love good home made meatloaf.  I cant stand the stuff that comes from most restaurants, though---tastes like Alpo smells to me.  The only GOOD restaurant meatloaf I have ever had comes from Cracker Barrel---and they use ketchup!

Seriously...follow Tracey's recipe and add a dollop of sour cream to the mixture, then top it off (after you make the slit with the soup) with a ton of the seasoned bread crumbs and shredded parmesan (I used shredded parmesan/asiago that you can find at the grocery store). SO freakin good.
