So I need some lunch ideas Since Kevin is working "on the road" pretty much all day, he needs some lunches that he can bring with him. He does not have access to a fridge or microwave... but he can bring a cooler and leave it in his car until lunch time. The other problem, he is the pickiest eater I have ever met!! 
Basically he's sick of eating out everyday, and I'm sick of seeing the cost of him eating out everyday!!
So if anyone has any ideas, or recipes that I could make for him, it would be very appreciated! |

I love pb sandwiches!! However, Kevin says that's not enough food. He likes meat. Every meal must always have meat... No junk food. (no fun) He likes sandwiches, but gets bored with them after the first day so that's why I'm looking for suggestions. He loves tomato and cuc salads. That's pretty much it for veggies... loves italian, only a very little mexican... no chinese. He really likes chicken and spaghetti, can you eat those cold? (no chicken salad though, already tried that and he just made a face and shook his head) I was thinking macaroni salad and a bologni sandwich with a pickle for one meal. Now I'm stuck I seriously think I heat up every meal I eat, except for pb sandwiches and cereal of course I can't think!! |

A big stuffed tomato w/ tuna salad, maybe? You can put them in those plastic tuperware-type things w/ lids. Or stick a pot roast in the crock pot w/ carrots & potatoes and pack up a bunch of that in a container w/ a lid---it's good, even if it's not hot. Cold roast beef sandwiches are good, too, and any number of raw veggies and dip?
I come home every day for lunch, so I dont need to practice what I preach! |

| How about cold cuts for sandwiches. You could use pitas or tortillas instead of bread to make them different. Will he eat carrot sticks or baby carrots? Some people liike cold spaghetti, but I don't. How about chicken breast strips in a tortilla? My mom likes potted meat on crackers. *barf* |

that lunch bag looks cool! I wonder if it really works... that would be perfect So far these suggestions sound good to me! I'll have to go over them with Kevin, see if they fly! I don't understand being that picky with food. I eat almost anything, except seafood and lunch meat! |

get a themos too...soup...chili...chef boyrdee(how in the world to you spell that...and as always...a salad...you can add grilled chicken ot tuna or cold cut...just buy a few freezer packs! I saw this really cool container I think at Target...it has a top for milk and another cup for cereal.... |

Kim, go get yourself one of those super wide mouth thermos jugs that are about 8" tall? I got ours at WalMart years ago. When I was teaching, I wanted hot lunches, but no time to eat out even if I wanted to. Really got tired of sandwiches day in and day out. With the wide-mouth, you don't need a cooler! Lance has always loved casseroles, stews, chunky homemade soups, so I just always made sure I made more than we could eat at dinner. That way, there were always leftovers. I'd zap it in the microwave in the A.M. and scoop it into the wide-mouth thermos and just kept a fork & spoon in my locker in the lounge at all times. The lid becomes a bowl, cut I usually just ate right out of the base. You can do soup, macaroni & cheese, chili, stew, casseroles, spaghetti, cold stuff like tuna/salmon salad, pudding, jello (I'd store mine in the freezer the night before if using for cold food).........the sky is the limit. Those wide-mouth thermoses are REALLY nice for working people without a full hour for lunch. |
