Here is a photo of a slice of Hummingbird Cake. (no hummingbirds were harmed in the making of this cake!) and a photo of a tall or sky high version!

Oh, Hummingbird Cake is absolutely yum, yum, yummy.  I've made it for cake auctions for my husband's Rotary Club and it's always brought in lots of $$$.  It is soooo good.  Never had the sky high cake, but it looks delicious too!

Ok... it's one thing to just say CAKE... it's another thing to go all out with the pictures and such.  Really, now.   And I LOVE pecans...

Why's it called hummingbird cake anyway?

LOL! I love pecans too and this cake is very good. No one really knows why it is called that. Some folks speculate that it is because of all the fruit and the sweetness of the cake. It is sweet like hummingbird nectar is sweet. But no one really knows.

I also found a bundt cake version of this cake too so it is also very versatile as well.

YUMMY!! I made a hummingbird cake once...I think it was the bundt cake version. It turned out pretty dense (not sure if it's supposed to ), and yeah, it was pretty sweet, but oh, so good.

Now where did I put that recipe?...
