OK, I'll start....I'm excited to hear what everyone likes to make in their crockpot!  Always lookin' for a new recipe to try.   This is one of my family's favorites:

****If you have not tried the Crockpot Liners....they are FABULOUS and make clean up a snap!!!

Chicken Tortilla Soup

Spray with Pam or line your crockpot with a liner.

Place 3 frozen, boneless skinless chicken breasts on bottom of crockpot then add:

1 can diced tomatoes with juice

1 can whole kernel corn with juice

1 can black beans with juice

1 can red kidney beans with juice

1 envelope Hidden Valley Ranch mix

1 envelope Taco Seasoning Mix

1 small onion, chopped

Stir the beans, corn and mixes a little to combine.....

Set crockpot on low.....6 hours.....

When you get home.....shred the chicken....which will be so tender you can just use a fork to do it....sometimes I even shred it right in the crockpot it is so tender......  Mix it together and serve in soup bowls with a dollop of sour cream and a little shredded cheddar cheese.  Instead of crackers we use tortilla chips.

David's favorite is chicken and salsa. Like you Colleen, I'm not overly fond of having to handle chicken... get yourself a good sturdy pair of sicssors for the kitchen hon and stick them in your silverware drawer... you can even use them this way when the chicken is still hot... or a whole chicken can be cut into sections while raw this way and it makes handling it ever so much easier! faster than laying it all out, getting slimey and cutting through bones with a knife. A sturdy pair of scissors cuts right through bones and all. no measurements for this recipe, just whatever chicken you have and dump a cup or more of salsa over the top and let cook on low all day... serve over rice or noodles or scoop into tortillas. makes your house smell wonderful and tastes lik eyou worked for hours on it. Serve with guacamole, sour cream, cheddar cheese, whatever you like best!

beef and lime...
take a package of beef (steak etc.) and toss in crock pot, add 1/4th cup of water and cut up a few limes in it. Same deal... let cook on low all day and add salsa and a clump of fresh cilantro if you can find it, near dinner time... spread on tortillas and feel good and spoiled! there's something about lime juice and beef together!... the taste is fantastic!

I love making stew in the crockpot. You take stew meat and coat it with flour and seasoning and brown it. Layer cut carrotts, potatoes, stew meat, onions, celery, about 1 1/2 cups beef broth over the top and just let it go. You can thicken the gravy at the end by turning up the heat and add a little flour/water mixture and stir. I add bouquet for a little darker color of the gravy but that's it. It's a favorite here.

What a coincidence! I am cooking beef stew in my Crockpot as we speak. I got a new one for Christmas that is oblong and is all digital - love it. Here is a good link with great recipes.

Here's one of my faves:  Vegetable Stew

ingredients:

4 carrots, diagonally sliced in 2" pieces

2 turnips, peel and cube appx 1"

1 lg onion, dice

2 garlic cloves minced

14 oz can diced tomatos

1 c veggie/chicken broth

1 t salt

1/2 t ground cumin

1/4 t crushed red pepper flakes

1 zucchini sliced 1/2"

16 oz can chickpeas, drain

Throw everything but the zucchini and the chickpeas into crockpot .  Cook on low for 6 hours or high for 3.  Add zucchini and chickpeas and cook 1 more hour on low.  Serve over barley or couscous for a nice hearty vegetarian meal.  (I prefer the barley...)  If you don't care for any of the above veggies, you can always leave it out.  Or try substituting...

Meat wise...  I often make my own barbq sauce in the crock pot with a meat.  Mix together 1c ketchup, 1/4c worchestershire sauce, 3 T sugar (I prefer to use brown), 2 T vinegar, and 1/2c water in the crockpot.  Throw in some chicken, beef, pork chops- whatever makes you happy.  Flip the meat around to cover all sides, turn the crockpot on low and let cook on low all day.  When you come home, you have nice, tender barbq'd meat.  The sauce is kind of tangy/sweet.  I love it.

And just to mix it up...here's a seafood gumbo.  It does require a little bit of prep for best flavor.  (Often I'll panfry sear my meats before throwing in the pot- it helps to seal in the juices for even tenderer cuts!)

Anyway, Seafood Gumbo

1/2 lb diced bacon

2 stalks celery sliced

1 onion sliced

1 green bell pepper chopped

2 minced garlic cloves

2 c chicken broth

14 oz can diced tomatos

2 T worchestershire sauce

2 t salt

1 t dried thyme

1 lb crabmeat and 1 lb raw shrimp, deveined and I prefer tail removed (depending on my mood, I'll sometimes used add'l crab and less shrimp- not the hugest shrimp fan...)

10 oz frozen okra, thawed and sliced

Cook bacon in pan until crisp.  Dump into crock and keep thin coating of fat in pan.  Add celery, onion, pepper, and garlic to fat and cook on med until tender.  Add to crockpot.  Toss broth, tomatos with liquid, worchestershire, salt and thyme into crock.  Cover and cook on low 4 hours.  (Or high for half the time)  Add crab shrimp and okra and cook 1 more hour on low.  Serve over rice.  James loves this dish.

This is what we had last night:

2 lbs - red potatoes (halved or quartered)

4 stalks of celery cleaned and sliced

2 onions - sliced

5 cloves of garlic minced

4 carrots sliced (chunky peices)

4 lb beef roast

2 packets "beefy onion soup mix"

seasonings - any kind you like ( I usually add some powdered roux to mine)

beef broth, chicken broth - either one

fruity flavored wine

I cut up all the veggies put them in a big bowl and coat them with my favorite seasonings.

Rub the powdered soup mix all over the roast

put half the veggies in the bottom, put in the roast, put the rest of the veggies on top.

pour in your broth and wine till 3/4 to the top of liquid

I usually let this sit in the fridge overnight. (makes for fast set up  when you are heading out the door the next morning)

On your way out the door, put it on low for about 10 hours.

When it is done you can either eat it out of the pot or:

take out the meat and veggies. put the juice in a pot on the stove with some flour and make a thicker gravy and then mix it all up again. Your choice.

Terea....I don't see why you couldn't freeze some....We usually haven't done that because hubby will take it as leftovers and so we have none to freeze. But I certainly wouldn't hesitate to try it.

This is what I am going to try making for dinner probably Tuesday or Wednesday

Mexican Casserole

Ingredients:
1 28-oz. can crushed tomatoes, with juice
1 14 1/2-oz. can salsa
1 6-oz. can tomato paste
2 15-oz. cans black beans, rinsed and drained
1 15 1/4-oz. can sweet corn, drained
2 chili peppers, sliced
1 tsp cumin
1 tsp garlic powder
5 tortillas

Directions:
Combine the tomatoes, salsa, tomato paste, beans, corn, chili peppers, cumin and garlic powder in a large bowl. Mix well. Place approx. 1 cup of this mixture in the bottom of the slow cooker and spread evenly. Top this with one tortilla and cut it to fit if necessary. Spread with 1/3 of the remaining mixture. Repeat these layers, ending when there is no liquid mixture left. Cook on Low for 5 hours.

Barbecued Ribs
Serves 3-4

Ingredients:
Ingredients
2 slabs pork spareribs (2.5 to 3 pounds each)
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 onion, sliced
1 jar (16 ounces) barbeque sauce


Directions:
Rub each side of spareribs with salt and pepper. Cut ribs into serving portions. Placeribs in broiler pan and broil 15 minutes or until browned. Drain. Put sliced onion in stoneware. Place rib sections on top on onions, pour barbeque sauce on top. Cover and cook on LOW 8–10 hours (HIGH: 4–5 hours).

Chicken Pot Pie Faux

4 Boneless chicken breasts (or more if your family is bigger)

1 Can of Cream of Celery soup

1 Can of Cream of Chicken soup

2 cans of Mixed Vegetables

1 Package of instant biscuts (the tube kind)

Place your chicken in the crockpot, and your two cans of soup and 2 cans of mixed veggies. Don't drain the veggies that is going to make your soup into a sauce. Now place the biscuts on top of everything and put the lid on and cook for 8-10 hours on low.

Crockpot All Day macaroni and Cheese
8-oz elbow macaroni(cooked aldente and drained)
4 cups shredded sharp cheddar cheese
1(12-oz) can evaporated milk
1 1/2 cups milk
2 eggs
1 tsp salt
1/2 tsp ground black pepper

Mix all ingredients together(reserving 1 cup cheese) then pour into a prepared(greased or lined) crockpot.
Sprinkle with reserved cheese.
Cook on Low for 5-6 hours, or until the mixture is firm and golden around the edges. Do not remove the cover or stir the mixture until the mixture has finished cooking.

Oh how fun. Here is our favorite! We cook it over night for about 12 hours. Then we put in on noodles. Yummy! I promise.

Put in to the pot

One slab of seered corn beef ( this helps lock in the flavor)

three cloves of garlic and some pepper

Three cans of italian stewed tomatoes.

One can of mushrooms

One small can of tomato paste

 

It is really yummy and perfect for St. Patrick's Day! Serve it over any kind of noodle, just not really long ones.


You have two hands, you might as well have two ratties....right?

I like to make sauerkraut and porkchops in the slow cooker. I buy pork loin chops (which are boneless) and brown them with a touch of garlic and pepper. (Remember not to use salt because the sauerkraut will have plenty of salt.) I use two 32 oz. jars of Vlasic Old Fashioned Sauerkraut. I pour one jar with the juice in the crock pot and then I drain the second jar of juice and just pour the sauerkraut in. I then add about a cup of water. Cover and let cook on slow for the next 8-10 hours or on high for the next 4-5 hours. OMG....the pork chops just fall apart. I always make mashed potatoes to go with Sauerkraut and Porkchops. I don't know why, but the combination is delicious.

Potato and Sausage Soup
INGREDIENTS:
• 2 medium to large russet potatoes (about 4 cups sliced and diced)
• 2 to 3 Italian sausage links, mild, casings removed
• 1 can (10 3/4 ounces) cream of potato soup
• 3 cups chicken broth
• 1 medium onion
• 1 cup evaporated milk
• seasoned salt
• pepper
• 1 to 2 teaspoons dried parsley flakes
PREPARATION:
Wash and thinly slice potatoes, then coarsely chop the slices. Leave some of the potato peel on, if possible. Thinly slice onion and coarsely chop. In 3 1/2 to 6-quart slow cooker combine potato, onion, soup, chicken broth, and onion.

Turn cooker on HIGH. In skillet over medium heat, brown sausage, breaking up into small pieces. Drain well on paper towels and add to cooker. Cover and cook on HIGH for 2 1/2 to 4 hours, or until vegetables are tender. Add milk and parsley flakes. Taste for seasonings and add salt and pepper to taste. Continue to cook for 15 to 20 minutes longer, or until heated through.
Stovetop: If cooking on stovetop, follow preparations directions, but simmer over low heat for about 45 minutes to 1 hour, or until vegetables are tender. Add milk and seasonings and heat through before serving.
Serves 6 to 8.

LOVE the sauerkraut/chops one!

I make pork BBque in mine that everyone LOVES!

Take a nice big ole Boston Butt (boneless or not)

Rub all over with Chipolte-cinnamon rub (in spice section)

In bottom of cooker layer thick slices of sweet onions.

A couple of large crushed garlic cloves.

Set Butt on top with fat side up.

Pour in 2 bottles of your fav BBque sauce. I like Honey Hickory and a locally made spicy sauce.

For "Heat" I add in one can of Chipolte Peppers (Mex Food aisle) with sauce over the top.

Cook high 3 or so hours then low 5.

Take out, pull apart with forks, add in a few ladles of the cooking sauce, chop the chipoltes, add in along with the onions. Mix it all up.

Serve on toasted onion buns with added BBque sauce and sweet pickles!!! YUMMY!

Great for a party cause you can put it all back in the pot on warm....

I don't do the crock pot thing but I do love Bob's Mexican surprise, I took  out everything except the main ingredients and it's more like a good dip.

1lb of ground Beef/or turkey

1 can each of Cream of Chicken, Cream of Mushroom and Rotel

1 Bag of Doritos

Cook meat, add canned ingreadients to pan stir till hot. Fill bowl either dip chips in or crush and scoop out(i do this way  and bought special fork for it).This is very fast and great if you have teenagers or children.

The other way to make is to find full recipe and at end get a cassarole dish and crush doritos in bottom of dish add meat then layer the other ingreadients. Cover with cheese, and bake untill cheese melts. After removing from over cover with lift over doritos then serve warm.

And you can't forget HOMEADE CHILLE  is an all time favorite.

We do any kind of dried beans/peas in the crockpot. We'll do corned beef and cabbage in there for St. Patrick's Day. Pot roast, beef stew, chicken and dumplings are all good in the crock pot.

Hi there,

Bella (my Chi-Rat) and I are new to this wonderful and informative site. We live on a Semi truck. for the most part. Home is in Florida but we are never home. I try to keep us (Doug, Bellas Dad and I) healthy by cooking on the truck and not eating out. I was thrilled to see some recipes on here that I could use. We cook by grill, crockpot and microwave. My problems is 2 fold. One is that I do not have the means to "sear or brown" meats so, I need recipes that just require me to put in raw meat with whatever else that comprises the recipe. It seems most everything I can find requires me to brown the meat. My second problem is I do not seem to be very creative with the microwave. We do alot of steaming of Vegies and I can make a mean breakfast of scrambled eggs, pre-cooked bacon and or pre-cooked pancakes. If anyone can give me some more great just toss and go crockpot recipes and microwaving recipes I would appreciate it so much. I am sure Bella would appreciate it. as well, since she usually is my taste tester...lol

About browning the meat (learned from an old cook) that you can use microwave to brown meat, I used to do it in my old apartment just make sure you brown meat all the way using a glass plate and rinse the meat thourghy afterwards. I use to do my dish listed above useing this method. Very quick to.
