This is what we are having for dinner.  It is SO yummy, especially if you like Thai food.  I usually add extra lime (I love it) and marinate chicken in lime juice overnight.

Coconut Lime Chicken

I love exotic food like Thai or Indian dishes. This recipe has a bit more fat and calories due to the coconut milk. You can lower the fat/calories by using lite coconut milk or using less coconut sauce on the grilled chicken.

Recipe:

  • 4 chicken breasts
  • 3 TB lime juice (or more as needed)
  • 2 TB lime zest
  • 1/2 c coconut milk (use lite if possible)
  • 1/8 tsp salt
  • 1 pinch cayenne pepper
  • 1 handful cilantro
  • 1 pinch green onion

Marinate chicken in 1 1/2 TB lime juice. Grill chicken on an outdoor grill or George Foreman grill. Warm coconut milk over low heat. Season with salt and a pinch of cayenne. Add lime zest, if desired. Add the remaining lime juice to coconut mixture. Pour sauce over chicken and garnish with scallion and cilantro. Squeeze lime juice over finished dish.  I serve on a bed of rice and then put the sauce over it all.

You know, yesterday the hubby & I were thinking we needed to add something different to the menu, and this sounds great! I am so sick of the same types of meals, we need some different recipes, so thanks for sharing

Mmmmm. Sounds good Sarah! I've been experimenting with shrimp dishes and Indian curries that use coconut milk and cilantro. It's an amazingly interesting ingredient. So subtle with the right spices. I'll bet it's great with chicken, too. Gonna try this one for sure.
