Does anyone have a sturgeon recipe or a recipe for some other firm texture fish that might work on sturgeon? My dad gave me some from the last one he caught, and I want to do something with it other than broiling or baking it with butter, salt and pepper, but I can't seem to find a SINGLE recipe in ANY of my cookbooks!

I don't have a Sturgeon recipe per se, (though I've been swimming in the Caspian Sea with them). Your firm-textured fish like Sturgeon and Redfish are EXCELLENT for charcoaling with your favorite fish bastes because they won't fall apart on the grill. A basic lemon, parsley, garlic, butter baste is is just wonderful on any charcoal grilled seafood. They are also the best fish for chowders, gumbos, bisques and seafood soups because they will hold together in the soup/stock.

what is a sturgeon. i have never heard of that kind of fish before and i work in the seafood dept. what color is it? like salmon or a white fish like tilipia?
