We're having a Fajita Fest on Saturday, June 7, to celebrate my youngest son's high school graduation.  Hubby and I are trying to decide what side dishes to have with the beef and chicken fajitas. 

He loves my baked beans, but I'm not sure they would really go with fajitas.  I think a crockpot of pinto beans would go better, not to mention being a lot easier to prepare.  Anyone have any other ideas for side dishes?

spanish rice, we always have that with mexican!!

nachos are also good!!

Do you have a good recipe for spanish rice or do you use a box?

We'll also have guacamole, queso, chips, and hubby's homemade salsa. I was just thinking we needed some veggies too. Hubby says (in Spanish accent) "Veggies? We don't need no stinkin' veggies!"

Honestly I use the rice a roni spanish rice, with the whole tomatoes it is really good.

You are going to have peppers and onions in your fajitas that is vegetables LOL!!

You can also make chicken wings or something with the taco seasoning right on them or black bean soup?

refried beans and mexican rice!
My mom used to simply mix white rice with Salsa...it was YUMMY....especially served with some shredded cheddar over top...
Corn also goes well with mexican although it is more of a starch than a veggie...hehe

Um, the teetotaling Grandmas will be there, so no margaritas or other alcohol until they go home.

My friend at work makes these I just got the recipe, they are good!1

Mexican Roll ups

 8 oz cream cheese

8 oz sour cream

1 to 2 cups of shredded cheddar cheese (eye ball it)

2oz chopped olives

2oz chopped chilies

chopped green onions optional

8 flour tortillas (about)

Mix ingredients together, spread over tortilla then roll up, refrigerate overnight slice into 1 inch pieces serve with salsa

I would suggest spanish rice.....I do mine from scratch and would be happy to share the recipe if you want it. I also have a good recipe for refried beans too. What about the 7 layer salad....that would also go along with it?

We're having our summer reading kick off party right now and someone brought some 7 layer dip. Yummy! I'm eating some right now. I think I'll make some for the party. It can be made ahead, right?
